Rich Man’s Beef Stroganoff

When I was a kid, my mom would make “Poor Man’s Beef Stroganoff” with ground beef, mushroom soup, and no additional dairy. I kicked it up with steak tips and a bit of milk for the sauce but kept it affordable and easy.

Ingredients

  • 3/4 of a medium yellow onion (or 1 small)
  • 1 package egg noodles
  • 1 can cream of mushroom soup
  • 1 small can of mushrooms
  • 1 pound steak tips
  • 1/4 cups milk
  • 2 tbsp butter
  • enough vegetable oil to cover your pan

Instructions

  1. Boil water and cook noodles according to instructions
  2. Season and brown the steak with a bit of oil until it’s medium-done
  3. While that’s cooking, chop onions and brown them with the butter
  4. Combine the beef and onions.
  5. Drain and add mushrooms.
  6. Add mushroom soup and milk.
  7. When the noodles are done and the meat is ready, drain the noodles, combine, stir, and serve.
